Made in the Italian provinces of Modena and Reggio Emilia. Made from Trebbiano, Lambrusco, Sangiovese, Albana, Ancellotta, Fortana and Montuni grapes. Antica Acetaia is produced in high quality thanks to Dodi's ingenious aging technique. It is a product with a strong and secret taste. It is obtained by mixing cooked grape must and wine vinegar. The mixture is then placed in wooden barrels and left to mature for eight years. It is moved between different casks throughout the ripening stage to develop unique flavor. After maturation, it is bottled and ready for consumption. Capriccio di Valeria Modena Balsamic vinegar is perfect for all salads, sauces, appetizers, white and red meats. It has a dark brown, bitter-sweet taste with a pleasant, intensely acidic and woody odour.
