Diyarbakir Braided Cheese is a cheese variety with high fat content, homogeneous, elastic structure, semi-hard, unique characteristic taste and aroma, high nutritional value and gaining consumer appreciation. Another important feature of the cheese is that it is given the shape of a hair braid. The color of Diyarbakir Braided Cheese is creamy white or slightly yellowish. When consuming, it can be separated into thread by hand, it has a bright appearance. It is additive.

Diyarbakir Braided Cheese is usually made from raw sheep's milk in the spring months. However, although it is not common, goat and cow milks and mixtures of these milks are also used in the production of the said cheese in periods when sheep's milk is not available or is scarce. Sheep milk used in the production of cheese is obtained from the dominant sheep breeds of Diyarbakır province, Akkaraman variety, Karakaş, Karacadağ Zom sheep and Avesi sheep. Since the sheep are fed extensively in the pastures in the province during the cheese production season, they are the natural plants unique to the region that give the cheese its taste and aroma. There is a rich plant existence in the region, a total of 534 plant species belonging to 269 genera from 66 plant families are grown. Mountainous areas, which contain a small number of endemic and rare plants unique to itself and the region, have a rich vegetation in terms of species diversity. In this context, wild species of many economically important grasses (Bromus ssp., Atragalus ssp.) and legumes (Trifolium ssp., Lathyrus ssp., Vicia ssp., Medicago ssp., Trigonella ssp.) plants grow in this region. In addition to the special quality of the milk from which cheese is made, the seasonal temperature of Diyarbakir province and the knowledge and skills of those who make Diyarbakir Braided Cheese are also unique to the region. In places where there is no cold storage, cheese is buried under the ground under the wet ground of trees facing north, and these cheeses, which are taken out in autumn, gain even more flavor.
