This cheese is the most popular and widely-consumed of the Greek cheeses and has a worldwide reputation. It has been produced in Greece since ancient times (since the time of Homer). It is made from sheep's milk or from sheep's and goat's milk using traditional technology and ripened in installations within the defined geographical areas. The development of sheep and goat breeding in the geographical area of production of "Feta", from ancient times until today, was a result of the special geophysical and climatic conditions of the geographical area. The result was the development of sheep and goat breeds with strong temperament and adaptability to these difficult conditions. These breeds, adapted to natural conditions and utilizing pastures with an amazing variety of flora, unique for the number of endemic vegetation species, are characterized by their low milk production but also for milk of very rich chemical composition and excellent organoleptic properties.
Thus, the milk used to make Feta cheese must come from traditionally farmed ewes and goats of local breeds, whose diet must be based on the flora in the pastures of the eligible areas. Extensive grazing and overwintering, which are the cornerstones of sheep and goat farming used to supply the raw material for Feta cheese, are the fruit of a patriarchal tradition that allows adaptation to climate change and its consequences in the available vegetation. This results in the development of indigenous breeds of sheep and goats of small size, very low-fat and durable, which can survive in a slightly generous quantitative environment which, however, is qualitatively endowed with a highly differentiated special flora that gives the final product special aroma and taste. Especially the traditional method of preparation, which definitely requires drainage without pressure, has given "Feta" cheese an exceptional international reputation.
