In the production of Giresun Hazelnut Paste, which is produced in the sugary hazelnut paste type, Giresun Chubby Hazelnut number 31, Giresun Pointed Hazelnut number 455 and Giresun Thick Hazelnut number 456, which are registered as geographical indications, are used. Giresun Hazelnut Paste is produced by mixing roasted hazelnuts and white sugar obtained from sugar beets and turned into powder during production, in certain amounts. Since the hazelnuts used in production consist of particles with a diameter of 4 - 6 mm, hazelnut pieces can be felt in the mouth while eating. In the past, Giresun Hazelnut Paste was produced by grinding roasted hazelnuts in a machine or by crushing them in a mortar, mixing them with granulated sugar and turning them into a paste called roller, but today it has become industrial with the effect of industrialization.
The harvested shelled Giresun Chubby Hazelnut, Giresun Pointed Hazelnut and Giresun Kalınkara Hazelnut are separated from their shells in crushing facilities. Rotten, wrinkled and defective (insect-eaten or undeveloped, etc.) hazelnuts in natural state are separated and the remaining hazelnuts are roasted in ovens. The brown membranes of the hazelnuts roasted between the roasted hazelnuts and the double roasted pan separate themselves after the roasting process. The moisture content of roasted hazelnuts should be between 1.8 - 2.5% and 5/4 of the membranes should be separated. The first grinding process of the roasted hazelnuts is carried out in a meat grinder with a 8 mm diameter perforated mirror. During this process, white sugar made from sugar beet is converted into powdered sugar between 40-60 microns in the grinding machine. Clumping occurs in ready-packaged powdered sugar due to moisture, and the sugar cannot penetrate the hazelnuts sufficiently. For this reason, powdered sugar must be obtained by grinding white sugar during the production of hazelnut paste.
No sweeteners or additives are used in production, other than powdered sugar obtained from white sugar. The mixture consisting of 70% hazelnuts and 30% powdered sugar is subjected to the second grinding process in a meat grinder with a 4 mm diameter perforated mirror. During the second grinding process; The natural oil in the hazelnuts is released, the powdered sugar penetrates the hazelnuts and the mixture reaches a dough consistency. The hazelnut particles in Giresun Hazelnut Paste formed after the second grinding process are in the range of 4 - 6 mm.
