The hairy chickpeas that are specific to the region and grown in the Ağın region are lightly boiled with some rock salt on a wood fire. Very fine sand extracted from a cave in Bademli Village is heated on a wood fire and the chickpeas are roasted in this sand. After cooling, the shells are removed and packaged.

Ağın Chickpea; It is a chickpea that is made from hairy chickpeas grown in Ağın district, obtained as a result of the production method specific to the region by using sand extracted from Bademli Village of Ağın district and water with oak ash, and does not stale for a long time if stored under appropriate conditions. Its color is reddish brown, its taste is salty and its appearance is matte.

The feature of the sand extracted from Bademli Village of Ağın district: Bademli Village sand is much smaller than conventional sands in terms of particle size. The magnesium calcium carbonate value in its content is 93%, which ensures that the heat conduction capacity is high, and this, unlike chickpeas produced in other places, makes it sufficient to roast the chickpeas of the chickpeas produced in Ağın only once, and also causes the chickpea to be crispy and stay fresh for a long time.

Description and Distinctive Features of the Product:

Features of chickpeas grown in Ağın district: Although Ağın district and its villages are a region where the Eastern Anatolian continental climate prevails, they have a temperate climate characteristic with a transition feature between the Mediterranean and continental climate due to the Keban, Atatürk and Karakaya Dams. While this climate characteristic causes a calcareous soil structure in Ağın, it enables the growth of chickpeas with hairy characteristics, thick shells but good shelling properties. This chickpea grown in Ağın district and a local population is a drop chickpea variety of the Cicer arietinum species belonging to the Faboideae subfamily of the Fabaceae (legume) family, and its characteristics are as follows.

Hundred Grain Weight: Hundred grain weight is between 40-50 gr.
Size: It was made by measuring length, width and thickness. It has been determined that the width is between 8 mm-11.1 mm, the thickness is between 7 mm-8.9 mm, and the length is between 6.2-9.2 mm.
Color: The colors of the chickpeas are determined on the color scale as seen in the sand. In this regard, the yellow colors of the scale, which vary between 3:1:1 - 3:4:1, are used.
1/4 Liter Weight: It varies between 330 - 345 gr.
Density: Between 1.32 - 1.38 gr/cm3.
Shell Ratio: Between 9.8% - 12.3%. It has the feature of shedding its shell quickly.
Cooking Time: Between 60-90 minutes.
Water Absorption Capacity Due to This Volume Increase: Water absorption capacity is between 104-117 gr. Volume increase is close to 100%.

Difference in Production Method: The process of boiling hairy chickpeas grown in Ağın in oak ash water is a method not used in chickpea production in other regions. In addition, while chickpeas roasted 3-4 times without sand in other regions are subjected to other roasting processes after a 10-15 day rest after the first roasting, Ağın Chickpea is roasted in sand and only once, and its shell is removed and offered for sale.

Production Method: Chickpeas received from producers are first passed through a sieve to separate chickpeas of suitable size for chickpea production and the stone soil particles mixed into the chickpeas. Chickpeas that are ready to be sorted and roasted are stored in sacks. 1 kg of oak ash is put into 15 liters of water and left to rest for later use. After resting for 3-4 hours, the oak ash settles to the bottom of the cauldron and the clean water remaining on top is used. Ağın Chickpea production can be done in two ways: machine and hand-made. In both production methods, the same quality of roasted chickpeas is obtained.
