Sürmene Knife is a product that has been identified with the region, known for many years, and has reached today with the cultural accumulation of the region. Furnace-bellows, anvil, scissors, vice and corner stone used in the production of Sürmene Knife with the traditional production method are produced by knife masters according to their own ease of use. The most distinctive feature that distinguishes the Sürmene Knife from other knives is its durability and sharpness. The quenching process to give durability to the steel is the most important feature that requires mastery. In today's technology, with the help of electricity and nitrogen, the knives are heated up to 1050 degrees in heat treatment machines to gain a hardness of 54-57 HRC. In the traditional method, the steel heated to embers is dipped vertically into pure dolphin oil and turned. It is rotated to get water. By quenching the tempered steels in this way, their brittleness is prevented and long-term use is ensured. Similar handle attachment techniques are used in different knives in the Republic of Turkey. However, the Sürmene Knife differs from other knives in terms of the technique of mounting with rivets (yellow brass). In the traditional method, after the wooden handle is mounted, 0.50-0.60 mm thick brass sills are attached to the blades and the blades are finalized. The sills and handles are lubricated by polishing with the help of sandpaper and felt. Trees such as rosewood, wenge tree are used for the stems. Polypropylene, original black and moblen raw materials are used as plastic handle.
