Favrskov blue cheese, made in the traditional Danish method from fresh cow's milk, is a strong, blue-veined, semi-soft cheese with a creamy consistency. It is called blue moldy cheese. Danish Blue (Danablu) can only be made with cow's milk from Danish cows within Denmark. Fat ratio is between 25 - 30%. The maturation period is between 6 and 8 months. Soft cheese can be used for Roquefort sauce, which adds flavor to red meat dishes.
