K-Favourites Original Pecorino Romano Italian Cheese (Italy) 200 gr with DOP - Geographical Indications Product
Pecorino Romano is a hard cheese cooked with fresh whole sheep's milk, sourced only from farms in the producing area. It can be inoculated with native lactic ferment cultures native to the production site and then coagulated with lamb rennet in a paste obtained only from animals raised in the same production area.
It comes with a pale ivory or straw colored thin shell, sometimes covered with a special protective coating for food in a neutral or black color. Cheese has a dense or a limited number of holes and its color can vary from white to more or less intense straw color depending on the technical conditions at the time of production. The taste of cheese is aromatic, slightly spicy and sharp in table cheese, intensely spicy in grated cheese.
From October to July, Pecorino Romano PDO is fully produced in the entire territory of the island of Sardinia and the regions of Lazio, as well as in the province of Grosseto in Tuscany. Depending on the nature of the cheese, it is in the form of a block or a wheel. It is one of the indispensable tastes of Southern Italian dishes, especially with dishes containing pasta, potatoes and vegetables.
